[Effect > Hue/Saturation...], [Properties window - Effects tab -double-click Hue/Saturation]

You can edit the options for the Hue/Saturation effect.

Hue
Specifies the hue of the selected object in degrees.
Saturation
Specifies the saturation of the selected object as a percentage (%).
